Pizza 67 is an Icelandic restaurant chain that operates, either directly or through franchisees.
The first Pizza 67 restaurant was opened in 1992 in Reykjavik, Iceland. The first restaurant focused on home delivery and carryout service and experienced an average sales growth of 20% per month for the first eight months. In 1993, Pizza 67 opened its second restaurant in Iceland, emphasizing dine-in service. Pizza 67 franchises began opening within two months leading to the current total of 16 locations.
Pizza 67 restaurants
Pizza 67 restaurants offer casual dining using a limited, moderately priced menu that features pizza, sandwiches and Tex-Mex entrees. The Pizza 67 concept expands on the take away and home-delivery concept serviced by its competition and emphasizes a unique atmosphere and design.
Although Pizza 67 restaurants attract a variety of patrons, the concept of the restaurant is targeted toward young college-aged and professional people interested in a casual retro-atmosphere.
The Pizza 67 restaurants have a section located near the entrance which sells merchandise, including t-shirts, sweat shirts, baseball caps and other casual clothing bearing the Pizza 67 logo.
Design & Layout
A typical restaurant has 70-120 seats, carryout area, and in most cases home delivery. Each restaurant has a unique Pizza 67 design that is adapted to individual locations. Pizza 67 restaurants are usually situated near high traffic areas and in downtown locations. Restaurants located in the city center usually focus on the dining experience while suburban locations emphasize home delivery and carryout services.
Customers
The Company believes that its Pizza 67 restaurants generally appeal to a wide range of customers from throughout the metropolitan areas where the restaurants are located. However, the concept of the restaurant targets young college-aged and professional people interested in a retro restaurant atmosphere. The restaurants compete for customers with casual dining restaurants operated independently and by national, regional and local chains.
Restaurant Operations and Management
A full-service Pizza 67 restaurant employs approximately 6 full-time equivalent (“FTE”) wait staff who serve food and beverages, 5 FTE delivery staff and 6 FTE kitchen staff who are responsible for all food preparation. Generally, the following persons manage each of the Pizza 67 restaurants: a general manager, assistant manager, kitchen manager and promotions manager. The general manager oversees all operational and administrative aspects of the Pizza 67 restaurant including food and beverage service, food preparation and promotions.
The general manager also supervises the kitchen manager, assistant manager and promotions manager. The assistant manager is responsible for customer service, inventory control, preparation of necessary reports and forms, maintenance and cleaning of equipment, scheduling labor and compliance with federal wage and labor laws. Generally, the assistant managers hired by the Company have prior restaurant or retail experience.
The kitchen manager is responsible for supervising all food preparation by the kitchen staff. The kitchen manager’s duty is to ensure that the methods of food preparation, weight and dimensions of products served and standards of cleanliness, health and sanitation conform to the Franchisor’s standards and specifications as well as in accordance with all applicable health standards.
The promotions manager’s duty is to create and conduct marketing, advertising and promotional campaigns to promote and exemplify the Pizza 67 concept. The promotion manager is responsible for preparing promotional budgets, conducting promotional training sessions, organizing and overseeing the merchandising of promotional items sold, as well as for making direct sales calls, attending community meetings and meeting with the media. Larger restaurants may have one employee for each of these positions, however small to medium size locations will most likely combine these responsibilities in one or two managers.
